You can blend it to make it all creamy delicious or leave it chunky. The grocery stores sells bread bowls, or boules, if you want to serve the soup that way. I love it just the way it is!

Use turkey sausage if you prefer. Patak’s in Austell is an amazing Bohemian butcher shop that sells the best sausages, fresh meats, and lots of international products. (Great prices, too!)

Use whatever you have to make this comforting and filling vegetable soup, which will make you feel better. Remember, if you are using dry beans, you must soak them at least overnight prior to making this soup.

    Still have some leftover turkey? Great! If not, chicken works well. This is a really healthy way to get out of the holiday rut and use up some of that curry powder you have! You can use cooked white potatoes or sweet potatoes. I used both!
