Crispy Refrigerator Pickles
6 cups water
1 cup white vinegar
1/2 cup pickling/canning salt
1 tablespoon sugar
2 tablespoons pickling spice
1 tablespoon whole peppercorns
Fresh minced garlic
4-5 inch mini cucumbers
To make the brine, bring water, vinegar, salt, sugar, and pickling spice to a rolling boil.
In the meantime, slice cucumbers into spears or chips and insert into mason jars with fresh dill, whole peppercorns, and garlic.
After letting the brine cool completely, poor it over your cucumbers and close the jars completely, straining out the mixing spices.
Set the jars in the refrigerator for 24 hours to let the cucumbers brine into the tastiest, crispy pickles you’ve had yet!
These pickles should keep for up to a week.
You can also use this recipe to pickle okra or green beans for something a little different!
Simple Cucumber Salad
Cucumbers (any variety)
Small red onion
1/2 cup sour cream
2 tablespoons red wine vinegar
Salt and pepper to taste
Cut washed cucumbers and red onion into thin slices.
Mix these into a large bowl with minced garlic, dill, sour cream, salt, pepper, and vinegar.
Garnish with a sprig of fresh dill and serve. It’s that easy!
