Sausage, Mushroom and Chicken Casserole

Whether you are battling diabetes or just embracing low-carbohydrate living, low carb eating can be tricky. The biggest problem is that the healthiest of vegetables also have carbohydrates. Sometimes, we just want some comfort food! This recipe is prepared to be reminiscent of Chicken and Dressing, but no dressing; however, the flavors and textures are similar. For this rich and decadent treat with very few net carbs, you can use full fat cream cheese or Neufchatel, which is 1/3 less fat and actually contains fewer carbs than full fat cream cheese. Sausage, Mushroom and Chicken Casserole
Recipe type: Entree
  • 4-5 cups diced cooked chicken
  • 1 lb. raw pork sausage or turkey sausage
  • 2 stalks celery, chopped
  • 1 small onion, chopped
  • 1?2 lb. mushrooms, sliced
  • 2 tsp. poultry seasoning
  • 8 oz. cream cheese or Neufchatel, softened
  • Florets from one medium cauliflower, cooked and drained
  • 8 oz. cheddar cheese, shredded
  • 1 tsp. salt (or to taste)
  • ½ tsp. pepper
  • Paprika (optional)
  1. In a large skillet, brown the sausage and drain.
  2. Place drained sausage in a bowl.
  3. In the same pan, sauté the celery, onion and mushrooms.
  4. Add poultry seasoning and stir.
  5. Return sausage to pan.
  6. Stir the softened cream cheese into the sausage mixture until well blended.
  7. Coarsely chop the cooked cauliflower.
  8. Add to pan.
  9. Add chicken and cheddar cheese.
  10. Stir together ingredients.
  11. Taste for salt.
  12. Add salt and pepper as needed.
  13. Stir again and spread in a greased 9”x13” baking dish.
  14. If desired, dust the top with paprika.
  15. Bake, covered with foil, at 350 F for about 30 minutes.
  16. Uncover and bake until hot and bubbly and top is lightly browned, about 10 to 15 minutes.
