Polynesian Energy Bars

Toasted unsweetened coconut and dry roasted, salted macadamia nuts make these Polynesian Energy Bars so special. Don’t be afraid to add salt (or salty ingredients) to race day food and drink. These are adapted from Liar Bars at nomnompaleo.com.

Polynesian Energy Bars
Recipe type: Breakfast
  • 1 ½ cups unsweetened flaked coconut (divided)
  • ⅓ cup dry roasted salted macadamia nuts
  • 5 Medjool dates, pitted
  • ½ cup dried pineapple chunk
  1. Toast coconut on a sheet pan in an oven (preheated to 300°) for 4 minutes.
  2. Set aside to cool.
  3. Place nuts in food processor and pulse until finely chopped.
  4. Add dates and pineapple.
  5. Pulse until all is finely chopped and forming a ball.
  6. Add 1 cup of coconut and process until everything is combined.
  7. Create a log of the dough by laying it out on plastic wrap, rolling it up and rolling the ends to create a sausage look.
  8. Refrigerate for 2 hours.
  9. Remove and slice into cookies.
  10. Press cookies into remaining coconut.
  11. Store in the refrigerator or freezer.
