Clean Eating: Overnight Oatmeal
I make it once a week and get about 6-7 servings, which I put in containers in the fridge as they wait their turn to warm our bellies. Pomegranate seeds are a great addition for a fresh pop of flavor. Don’t try this with cows’ milk – it cooks at too low of a temperature.
  • 4 cups unsweetened almond milk
  • (use water or plant-based milk- no dairy)
  • 1 cup Steel Cut Oatmeal
  • (must be steel cut, old fashioned get mushy)
  • Fruit- be creative with what you have on hand
  • Use dry or fresh and chop them all. Use at least 1 ½ cups. I used dried apricots, dates, figs and cranberries.
  • 2 Tbsp. Ground Flax Seeds
  • 2 Tbsp. Chia Seeds
  • 1 cinnamon stick, broken in half
  • Fresh Pomegranate Seeds (optional)
  1. In a slow cooker add all ingredients except the pomegranate seeds. Give them a stir to combine. Before you go to bed, set your slow cooker to warm or “keep warm”. Wake up and stir the pot. Spoon into bowls and add pomegranate seeds. Enjoy!
