Grecian Goddess Chicken Kabobs and Salad

All the flavors of Greece. We change out a couple ingredients for the dressing and place it on top of grilled chicken kabobs. Here the dressing becomes a sauce and unites the Greece flavors. Use the basic dressing and make the following swaps: Use fresh dill and fresh mint in place of the fresh herbs recommended. Be sure to still use the parsley.
  • 2 boneless, skinless chicken breasts, cut into 2-inch cubes
  • 2 Tbsp. Olive Oil
  • 1 tsp. lemon zest
  • 2 Tbsp. lemon juice
  • Salt and Pepper, ½ tsp each
  • Lettuce
  • Tomatoes
  • Olives
  • Feta cheese
  • Thinly sliced red onions
  • Sliced cucumber
  1. Place chicken in zip bag along with the olive oil, lemon juice, zest, salt and pepper. Toss to combine and refrigerate for 1 hour. Heat the grill to medium high. Skewer the chicken on metal or wooden skewers. Lay on heated grill and leave for 4 minutes. Turn over and cook for another 6 minutes or until the chicken is done through.
  2. Toss salad ingredients together along with 2 Tbsp. Grecian Goddess Dressing. Serve alongside kabobs with additional dressing over the top of the kabobs.
