Polynesian Energy Bars
Recipe type: Breakfast
  • 1 ½ cups unsweetened flaked coconut (divided)
  • ⅓ cup dry roasted salted macadamia nuts
  • 5 Medjool dates, pitted
  • ½ cup dried pineapple chunk
  1. Toast coconut on a sheet pan in an oven (preheated to 300°) for 4 minutes.
  2. Set aside to cool.
  3. Place nuts in food processor and pulse until finely chopped.
  4. Add dates and pineapple.
  5. Pulse until all is finely chopped and forming a ball.
  6. Add 1 cup of coconut and process until everything is combined.
  7. Create a log of the dough by laying it out on plastic wrap, rolling it up and rolling the ends to create a sausage look.
  8. Refrigerate for 2 hours.
  9. Remove and slice into cookies.
  10. Press cookies into remaining coconut.
  11. Store in the refrigerator or freezer.
