Dreamy Salmon in Piccata Sauce
This excellent dish will wow your most discriminating (and picky) guest, even those who say they don't care for salmon.

Serves: 2 servings
  • ½ pound salmon fillet, skinned and cut in half
  • ½ cup dry white wine, divided
  • 1 teaspoon Branch & Vine Picual extra-virgin olive oil
  • ½ large shallot, minced
  • 1 tablespoon lemon juice
  • 2 teaspoons capers – rinsed and drained
  • 2 T. plain Greek Yogurt
  • ⅛ teaspoon salt
  • 2 teaspoons chopped fresh dill
  1. Place salmon in a large skillet.
  2. Add ¼ cup wine and enough water to just cover the salmon.
  3. Bring to a boil over high heat. Reduce to a simmer, turn the salmon over, cover, and cook for 5 minutes.
  4. Remove from the heat.
  5. While fish is cooking, heat oil in a medium skillet over medium-high heat.
  6. Add shallot and cook, stirring, until fragrant, about 30 seconds.
  7. Add the remaining ¼ cup wine.
  8. Boil until slightly reduced, about 1 minute.
  9. Stir in lemon juice and capers; cook 1 minute more.
  10. Remove from heat.
  11. Stir in yogurt and salt.
  12. To serve, top the salmon with the sauce and garnish with dill.
