This recipe comes as a memorial to my sweet brother-in-law. Whenever I make hummus, I think of him. I always called Gary when I made hummus. He would walk me through whatever was going on in my life. I miss you, Gary!!
- 1 can (15oz) Garbanzo Beans, drained and rinsed well (reserve bean water)
- 1 lemon, juiced
- 2 cloves garlic
- 1 Tbsp. Tahini
- 1 Tbsp. olive oil
- 1 tsp. cumin
- A small handful of clean fresh parsley, chopped
- Add everything except the parsley to a food processor or high-speed blender. Process until smooth, adding some of the bean water as needed to make it smooth. In the end, add the parsley and pulse until the parsley is well distributed.
- Enjoy with Pita Chips.
